Hi friends! Welcome to procrasti-baking Sunday! Springtime is finally here! In the spirit of the new season, I made strawberry lemonade cupcakes!
These are my favourite cupcakes I’ve ever made, hands down! But it wasn’t an easy process! The recipe is from the blog Blahnik Baker (link HERE). The cupcakes turned out perfectly delicious on the first try, but the frosting, well, ahem… see for yourself…
Needless to say, I had a bit of difficulty with what was supposed to be the strawberry lemon Swiss meringue buttercream frosting! I think I’m going to submit the above photo to PinterestFail.com shortly! It’s not the fault of the recipe’s author… apparently Swiss meringue buttercream is very difficult to make! You need exactly the right temperature, proportions and tools… which I clearly didn’t have! For example, butter at room temperature really needs to be at room temperature! I just took it out of the fridge and popped it in the microwave to soften it, like I usually do… apparently a big no-no in this case!
I’m not the first person to have this problem, as evidenced by various online posts, like THIS ONE, called How to Fix Swiss Meringue Buttercream Frosting! Despite trying cooling, heating, beating, mixing, whisking and even adding icing sugar, I just couldn’t get the consistency right, so I decided to try something different from scratch!
This time, I went with a slightly simpler strawberry buttercream frosting recipe from a blog called Cooking Classy. I threw in some lemon extract, a bit of lemon zest and an extra teaspoon of vanilla extract, and this frosting turned out just fine! Hooray!
So what did I do with the leftover failed frosting? With so many good ingredients, it still tastes great! And as you may know, I don’t like to waste food! After everything I did to try to fix it, it just ended up having the consistency of a thick sauce rather than a light, fluffy cupcake frosting! So I’ve refrigerated it and I’m thinking of using it as delicious strawberry lemon buttercream pancake/waffle sauce instead! 😛
What have I learned from this procrasti-baking adventure? Well, I’ve learned that I’ve got a lot to learn! With some recipes, I can easily get away with being lazy when measuring my ingredients. Other times, not so much! I’m also thinking of investing in a stand mixer someday! I may be outgrowing my small electric beater!
