Hello, dear readers! Firstly, I’d like to apologize for having been M.I.A. for so long… has it been two months? Holy smokes! Well, I suppose anything goes, given the title of my blog! Ha! The truth is, I started a new full-time job a couple of months ago, so I’ve unfortunately been neglecting certain aspects of my life, including blogging! 

As an occupational therapist, I’m a strong advocate of work-life balance… gosh, do I ever need to start practicing what I preach!!! Talk about a shoeless cobbler! Well, they say it can take up to 3 months to adjust to a big lifestyle change. So I’ll be stepping up my game over the next month, I suppose! While searching Pinterest for some Mother’s Day dessert inspiration, I found this recipe for Italian Pear Almond Cake on the blog Seasons & Suppers… and it completely blew me (and my mom) away! With the delicate sweetness of pears and the distinctive flavour of almonds, this cake looks and tastes absolutely delightful! It’s hard to believe that such an easy recipe can yield such a beautiful finished product! Sometimes simple is best! Waffles. They’re my new favourite food to make! And they seem to be all the rage on Pinterest and Instagram these days! I made waffles for the first time a little over a month ago (say WHAT?). They were buttermilk waffles with cherry syrup and they were fantastic! Since then, I’ve tried quite a few different waffle recipes in my old and clunky, yet ever-reliable waffle iron! After some experimenting and tweaking, I came up with my easiest, most versatile recipe yet, and I’d like to share it with you today! To me, they’re the perfect waffles! Happy Valentine’s Day everybody! A hundred years ago, I’d have been considered a spinster by now… But times have changed! In the media, single people are so often portrayed as being sad and lonely on Valentine’s Day… but the single life is just fine for me at the moment! My Valentine’s Day was not very romantic, but it was pretty delicious!
